Gluten Free Baked Macaroni and Cheese is one of those meals that if my mom announced we were having it that night, I’d start to dance. No meal can make a kid dance like macaroni and cheese does.
I request this meal for my birthday every year, without fail. Even a gluten-free diet can’t separate me from this dish.
To some on a gluten-free diet, the idea of ever being able to eat macaroni and cheese again sounds impossible.
But, it’s easier than ever. It’s really just a matter of picking up a box of gluten-free pasta instead of wheat pasta, and in this case a box of gluten-free breadcrumbs. Or you can crumple a few slices of gluten-free bread for a more rustic Baked Macaroni & Cheese.
I used 100% corn pasta. There are many different types of gluten-free pasta, the sky is really the limit, so go with what makes you happy. Just be sure to follow the package’s directions, so you don’t end up with what I call a “goopy mess”.
It might seem strange to some of you, but my family has always paired this Gluten Free Baked Macaroni and Cheese with a couple spoonfuls of stewed tomatoes, so the directions for that will be below as well. Yum!
If you haven’t tried this combination before, I encourage you to try it now. Even my boyfriend, a person who once detested tomatoes, prefers it this way. Simply amazing.
Notes on Gluten Free Baked Macaroni and Cheese:
- Use a different type of gluten-free pasta to switch up the nutrients of this recipe and add more protein. (Corn pasta vs. red lentil pasta)
- Eat this dish as is or make a pot of stewed tomatoes to go with it (instructions below)
- Switch out gluten-free breadcrumbs for pieces of chopped GF bread for a more rustic macaroni and cheese.
