This week I tried out a box of King Arthur Flour Gluten Free Pancake Mix, because let’s face it. Everyone loves waking up to a fresh stack of blueberry pancakes. Talk about yum.
In my household, I’m sort of known around here as the “Pancake Queen”. I love making pancakes (it’s one of my favorite past-times). I’ve tried out so many recipes and pancake combinations that it’s totally absurd.
However, once I learned I was Celiac, pancakes became a little bit harder. I had the hardest time with finding a gluten-free batter that produced fluffy and thick pancakes (the way that I like them). Which is exactly why it’s a blessing that there’s boxed-mixes out there that have already-perfected batter, for the days you’re feeling a bit lazy or short for time.
King Arthur Flour always has your back. 😉
Another plus to this pancake mix is that it’s non-dairy (as long as you use vegan butter or oil and non-dairy milk) and non GMO.
My Rating (King Arthur Flour Gluten Free Pancake Mix Review):
It took somewhere between 5-10 minutes to mix all of the ingredients of this boxed-mix together (flour mix, blueberries, egg, butter, and almond milk). Then, an additional 15-20 minutes to cook a total of 10 medium-large pancakes in a pan (two at a time). Quick tip: Use a griddle to be able to cook bigger batches at a time. I also find that griddle’s tend to heat up faster. The bottom line is that I woke up, prepared, and cooked blueberry pancakes all within the first hour of being awake. Now, that’s a feat.

These pancakes tasted identical to a non gluten-free recipe I used to make. They. Are. Delicious. I was able to eat every last bite of my three-stack and still want more (and I have a small appetite).
They were light and fluffy, yet thick and filling. Even my boyfriend adored them (and me for making them!)
King Arthur Flour knows how to concoct the perfect ratios of gluten-free flours. I don’t know how they do it, but I wish they would give me a class. Their mixes always turn out divine and they are oh-so-comforting. Needless to say, I look forward to buying this mix again and seeing how chocolate chip pancakes turn out.
